Slow Cooker Chicken Soup

Crock-pot Chicken and Tortilla Soup

2 chicken thighs and drumsticks
1 medium sized onion chopped
2 stalks celery chopped
1 carrot grated
1 sweet red pepper chopped
1 Tablespoon Salt
1 teaspoon ground cumin (optional)
1 teaspoon chili powder (optional)
1 bunch radish greens chopped (optional)
Water to cover

Black pepper to taste
Tortilla chips
*Scissor Salsa (or chopped cilantro, radishes, cabbage, green onions, tomatoes)
Lime wedge
grated white cheese

Place all ingredients in crock pot cover with water. Crockpot low setting for 6-8 hours
Shred chicken and remove bones. Taste and adjust seasoning
Serve topped with chopped cilantro, tomatoes, green onion, cabbage, radishes, salsa and tortilla chips and grated cheese
Lime wedges to squeeze over soup

(You can make your own tortilla crips by slicing up tortillas and frying them in oil or toasting them in the oven)

Tomatoes, cabbage, radishes, cilantro, green onion and jalapeños

Kids can help make this easy salsa! Let them use clean safety scissors to cut the salsa ingredients into little pieces.
