Slow Cooker Bread Pudding

Slow Cooker Bread Pudding with Apple and Walnuts

Serves: 6-8 Difficulty: Easy Prep Time: 20 minutes Cooking Time: 3 hours on low


Vegetable oil spray
8 cups cubed stale (or at least dry) bread, preferably a “sweet” bread/roll
3½ cups cubed apples
¾ cup walnuts, chopped and toasted*
¼ cup butter
4 eggs
¾ cup dark brown sugar
1 tsp ground cinnamon
1 tsp salt
1 tsp vanilla extract
2 cups milk

Spray inside of slow cooker with vegetable oil spray

In a big bowl mix cubed bread, chopped apples and chopped walnuts. Dump into prepared slow cooker.

Place butter in a medium microwavable bowl. Set microwave power to 50% and microwave in one minute pulses until butter is liquid like. Crack eggs into bowl and add brown sugar, cinnamon, salt, and vanilla. Whisk until smooth. Then add milk and whisk until combined.

Dump milk mixture over bread mixture in slow cooker. Press down lightly on top of bread just until you see some of the liquid starting to come up the sides. Cover with lid.

Cook on low until a knife inserted in the center comes out clean, about 3 hours.
