Pizza Dough

PIZZA DOUGH from Quillisascut
(makes 6 pizzas)

2 1/4 cups warm water
2 tsp yeast
1 1/2 tsp kosher salt
1 1/2 tsp malt (or honey)
4 1/2 cups high-gluten flour

Combine all ingredients in a large bowl and mix with your hands until completely incorporated.  Transfer to an oiled container and put in the refrigerator overnight.  The next day, divide dough into 6 equal pieces and shape into balls.  Let proof for appx. 3 hrs at room temp, until balls are puffy and stretch easily.  Top pizzas and bake in the hottest oven you can find.
